Reindeer Cookies

Ingredients

  • Pretzels 
  • M&M’s 
  • Candy eyes 
  • Biscuits of your choice 
  • Nutella 

Steps

  1. Melt the Nutella 
  1. Using the melted Nutella, attach an M&M as the reindeer’s nose, the pretzels as the antlers, and candy eyes as the reindeer’s eyes. 
  1. Refrigerate until set 

Brownies Christmas Trees

Ingredients

  • Brownie mix 
  • 1.5 sticks of butter, softened 
  • 4 cups powdered sugar 
  • 1 teaspoon pure vanilla extract 
  • 2 tablespoons heavy cream 
  • Pinch kosher salt 
  • Green food coloring 
  • 6 candy canes 
  • Sprinkles  

Steps

  1. Preheat oven to 350°. Make brownie mix according to package directions. Pour batter into prepared pan and bake until a toothpick inserted in middle of pan comes out with a few moist crumbs, 25 to 30 minutes. Let cool completely.   
  1. In a large bowl beat butter until smooth. Add powdered sugar and beat until combined, then add vanilla, heavy cream, and salt. (If you desire a thinner consistency, add 1 more tablespoon cream.) Add green food coloring until desired color is reached. Transfer to a piping bag with a small open star tip. 
  1. Remove brownie from pan and cut into 3 long rows, then cut each row into 6 triangles each for a total of 18 triangles. 
  1. Cut candy canes and insert into the bottom of each brownie to create a trunk. 
  1. Pipe a zigzagging line on top of brownie and top with sprinkles for ornaments. 

Gingerbread Fudge

Ingredients

  • 12-ounce white chocolate, melted 
  • 1 cup sweetened condensed milk 
  • 1 teaspoon ground nutmeg 
  • 1 teaspoon ground cinnamon 
  • 1 teaspoon ground ginger 
  • Red and green sprinkles 

Steps

  1. In a large bowl, mix together white chocolate and sweetened condensed milk. Add nutmeg, cinnamon, and ginger and stir until combined. Stir in almost all sprinkles (leave some to sprinkle on top) until combined. 
  1. Using a spatula, transfer fudge into a parchment-lined glass baking dish and smooth over top. Sprinkle with remaining sprinkles and let sit until firm, at least one hour. (Transfer to the fridge to speed up the process.) Cut into squares and enjoy.

Don’t you like the idea of being able to customize your food to your preferences rather than having to keep picking out and removing ingredients you don’t like? Then J’Oli is a must-visit if you’ve never had the pleasure of making your own wrap or salad!  

Members of The Third Eye had the pleasure of meeting Oliver Borg, co-founder of J’Oli, where they got to learn about J’Oli and its origins, all while witnessing firsthand the stellar service provided at the establishment!

J’Oli’s History

Co-owners Oliver Borg and Jean Paul Cascun had talked about starting a catering business for a long time. Their business backgrounds set them apart from the competition, and their unique and innovative approach to food earned them popularity from all over the island. 

J’Oli now has two more locations in Msida and Valletta, after opening one in Sliema in 2014. 

The origin of the name was actually the most time-consuming aspect of their project. They came up with the name ‘J’Oli’ by combining their first names, Jean Paul and Oliver, to create an original combination. 

Their Mission

Oliver and Jean Paul wanted to make food that was both delicious and nutritious. What better way to promote a healthy lifestyle than to open a salad sandwich bar where customers can make their own salads? 

Customers have the option of building their own wraps and salads by selecting their own ingredients! 

Oliver believes that allowing customers to choose their own ingredients will encourage them to eat the food more passionately. 

Furthermore, by allowing customers to select their own ingredients for their meals, they have made their establishment more feasible to those with food allergies or picky eaters. 

J’Oli aims to make healthy food accessible to everyone, regardless of the ingredients they prefer. 

Moreover, they believe in the importance of providing children with healthier food options from a young age in order to teach them the importance of eating food products that are beneficial to the body.

KSJC is back with yet another initiative which is all about inclusivity! The JC Canteen shall now be catering and serving vegan-friendly meals ranging from salads to even vegan burgers.

Kleaven Pisani, KSJC President, said that the council made it a point to increase inclusivity for Junior College Students. The council saw a lack of this, especially with regards to vegan food being easily accessible for the students.

“The idea of increasing the amount of vegan food being prepared in the school canteen was always seen as something fruitless in previous years, however this year, thanks to a council that is even closer to students than ever before, we realized that there is a considerable amount of students that follow these vegan and vegetarian diets and that they find it difficult to find suitable options that suits their likes and dislikes”.

This will not only target those who are on a vegan diet but it will also encourage students to try out vegan food to satisfy their taste buds.

“As a result, we tackled the problem head-on, discussing different ideas with the school canteen on how we can cater for these students. This initiative is going to create a fitter environment for Junior College students making their experience of higher quality”.

KSJC plans to further increase the food options that are available on Campus to cater to different cultures and diets.
