Hey y’all, it’s Adam & Rebecca with another macro-friendly recipe. This week calls for another RECIPE MAKEOVER. We present to you our healthy spin on the Sicilian classic; Pasta alla Norma. Who said eating healthy is boring?!

INGREDIENTS
- 85g wholewheat pasta
- 150g raw aubergine
- 200g cherry tomatoes
- 50g ricotta
- 30g onions
- 7g olive oil
- 1 clove garlic
- Fresh basil
- ½ tsp. dried chillies
- ½ tsp. oregano
- Salt & pepper
METHOD
- Thinly slice the aubergine. Sprinkle salt over them and cook in low-calorie cooking spray for about 5 minutes each side — do not overcook!
- In another pan, cook the garlic and onions until soft. Lower the heat and add the chillies, and cherry tomatoes. Finally sprinkle some oregano.
- Cook the pasta leaving it al dente. This usually takes around 8-9minutes.
- Add the tomato and onion salsa to the drained pasta, and top with the aubergines.
- Drizzle the olive oil and garnish with the ricotta and fresh basil
